Albanian Yanni Soup

This is a really delicious soup that tastes even better on day two.

2 cups of dry white beans

1/2 cup chopped onion

2 large cloves minced garlic

1/2 cup olive oil

2 tablespoons tomato sauce

1 tablespoon chopped parsley

1 tablespoon chopped mint

1 teaspoon chili powder

1 teaspoon smoked paprika

sea salt, freshly ground pepper to taste

lemon juice

Boil beans in hot water in an uncovered pot for 5 minutes. Rinse and boil for another 15 minutes in a covered stock pot in 3 cups hot water. Sauté the garlic and onion in olive oil until translucent.  Add 2 tablespoons bean stock  along with tomato sauce, parsley, salt, pepper, smoked paprika, and chili powder.  Cook for 10 – 15 minutes until sauce thickens.   Pour the sauce  into the bean pot.  Add chopped mint, cover and cook for about two hours over low heat.  Depending upon the beans, this could be done as quickly as one hour, so check often.  This should produce a thick soup, covering beans by about an inch.

Give each serving a squirt or two of lemon juice to brighten the flavor.  Add more sea salt or pepper to taste.

As a variation, I crumbled some feta cheese into a serving of the soup.  I liked it.  My husband didn’t like it.  You might find it tasty.

    This looks really good Denise . I am going to try this. I think for now just the easy ones for me.. this site kicks ass .. !
